Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (205°C). Place the pie crust in a pie dish, cover with foil, fill with weights, and bake for 10 minutes. Remove weights and bake for another 5 minutes until golden brown. Cool.
  2. In a saucepan, whisk together sugar, cornstarch, and salt. Gradually stir in orange juice, lemon juice, and water. Whisk over medium heat until thickened, about 5 minutes. Remove from heat, stir in butter and orange zest, and pour into the cooled crust.
  3. Preheat your oven to 350°F (175°C). Beat egg whites until frothy. Gradually add cream of tartar and sugar, continuing to beat until stiff peaks form.
  4. Spread meringue over the filling, sealing edges to prevent shrinking. Create peaks and swirls. Bake for about 15 minutes until meringue is golden brown.
